Sounds like the classic, fix the symptom not the cause.  *I* really doubt
that you are 3 times unlucky with the stat's.  I would like to know if you
bought OEM stats?  More possible causes: impeller not pumping enough, fan
clutch not working properly, blockage somewhere, or my personal favourite,
exhaust gas sneaking past the spark plugs. I suppose the same thing could
happen if the exhaust manifold was leaking.  Its also possible that the
sender is the problem and you have no overheating issue at all.  When you
took the rad cap off as you described, what happened? did you get the
coolant spraying out the neck, or was the system not under pressure?  When
you check the fluid level after the system has cooled, is it still full?
