You might be able to diagonally offset two tires on the rear rack
combo such that one is high and to the left, the other is low and
to the right, but the low one might drag when 'wheeling, and the
high one would probably block part of the rear view. I'm still
partial to the tire on the roof option, maybe with a smallish rack
or something. Have you considered a roof rack for the tire and
other gear? If you're going far and/or long enough, you'll likely
need more stuff than you can cram inside... unless you're only
taking two people and using the whole back of the truck as a
pickup.
Have you considered having a "normal" 35" spare, and a 31"
or so "spare spare" in the stock crank location? Figure if it
gets down to where you're using the 31" spare, it's a brief
"limp home" thing, just to get to where you can have a 35 fixed
or replaced?
Might not be pleasant to drive on it, but it's not too horrible in
the front (if you have a rear locker) at sub-80mph speeds.
