Ditto to what fasteddy said. The bypass valve opens when the oil gets hot.. it is never completely closed.. it still circulates oil when cold,, just not as much.
Verify your pressure with a mechanical gauge.
You said it was good the first 5 miles? was that before the engine got warm?
You can have high pressure when cold, but what is most important is what the pressure is when the engine is at normal temp ( 180 degrees)
