You could just wire in a light to the same power wire as from the controller to the fan. The brighter it gets, the harder the fan is running. You could also use a volt meter instead of the light to get a more accurate reading.

It's easier than that. Run the yellow ignition wire into the dash, through the switch, then to an ignition source. For water crossings, just throw the switch to cut power on the yellow wire and the fan will shut off.
You don't want a switch between the battery and controller. There's a lot of amps going through that so you'd need a big switch and lots of heavy wire to run it in, then back out of the cab.
