I've been pretty impressed by my controllers, as well. I had to trick them to create a high-heat situation to truly verify that they worked... with no thermostat, my motor comes up to operating temperature FAST and then just sits there, with small changes in fan and pump speed. It is incredibly lacking in drama!
You can use a bigger sheet of paper to force a higher heat to ramp the electric motor speed, though your day-to-day testing around Phoenix with your right ankle condition may provide test enough.
