When the coolant is refilled, the highest point on the system must be opened for air to escape. If not, the air has no place to go, and will be trapped. Cavitation is simply when air gets trapped around moving parts like the water pump and impedes the movement of the fluid. This will cause your water pump to die a premature death AND the lack of fluid movement will cause your engine to overheat since cooling isn't taking place.

The cure is to disconnect one of the heater hoses at the firewall and fill the system until fluid comes out of the pipe. You'll then want to connect and run the truck with allowing the coolant to move (once t-stat opens up) with the radiator cap off/heater turned on high and add more coolant/water as necessary. You should see the level in the radiator drop once the t-stat opens up. This will "burp" the system. In the past, I've installed the little in-line cap-able systems in a heater hose, but can't speak to their longevity.

Edit: Re-reading your post, I'm not sure what a "bleeding bolt" is as I've never had on on any of my rigs (that I know of). I've only used the procedure I've documented above and had good results.
