With assembly being done on a work table, I'm interested in how the machinist will stabilize the block when he torques the head bolts. I'm sure he has a trick - just curious how he does it.

From what I gathered they work in pairs so one will probably hold the block and the other torque it.
Frank : Should the heads be re-torqued after a certain amount of miles like some honda engines?

No, it's not necessary, but the original torque spec of 72 lb-ft was revised to 80 lb-ft hot or cold.
Also, I hope they've thoroughly cleaned the deck threads with a bottoming tap, checked head bolt length, checked clamping range by running the bolts into the deck/measuring the remaining height/subtracting head and washer thickness to make sure the head bolts will torque down smoothly and without false values. This is the easiest thing to overlook on a 3.0L rebuild and from what I've found, the most important.

I have put that new torque value and warned about the head bolts in writing to them and told them ( both the owner and the guys doing the assembly ) about it everytime I was there to make sure they check and do it right.
Thanks for all the help so far. With all the advice you have given me it should work out good. I'll try a time lapse video of the install.

Got the motor home at 18:15
Got it ready to go with mountings on the hoist at 19:45 after dinner
and this is at 21:10 with transmission and engine mountings bolted down

I'm starting to think about the monitoring of the vitals on my engine.
Where is a good place to get
oil pressure feed? oil temp feed? water temp feed? ( depending on the answer of question below )
Is the standard temp gauge measuring the water pre or post thermostat? I would think pre- thermostat because you can see the temp rise but this can also be due to heat transferred through the metal. I want to be sure as I want the temp reading before the thermostat as a stuck thermostat will show the heat rising on the standard gauge quicker than a post thermostat location.

Calling on the experts - Frank and FastEddy comes to mind ( I know that they know these engines inside out )
It's been a while since I disassembled and can't remember in what order I took it off. Can you advise on the order to assemble the front?
I hate having put something on and then having to remove it again because something else has to go first. - already had to take the inlet manifold off because I forgot the breather screw thing on the tappet cover that has a hose going to the throttle body 
still need to do ( what I can remember ) a/c compressor ps pump cambelt covers alternator coil brace thingy on the inlet manifold viscous fan radiator and cowling
